Happy Saturday!
Have a super busy weekend as on a course so I’m posting this kind of late but I have to share this recipe! Made these cinnamon rolls the other day for my friends birthday – see highlights for more pics of process 🤍🤍
(VEGAN) CINNAMON ROLLS
Ingredients:
345g strong white bread flour
50g caster sugar
2 tsp cinnamon
7g instant yeast
Pinch of salt
200ml lukewarm plant milk
80g (vegan) butter

Filling-
70g brown sugar
2 tbsp cinnamon (+/- depends on liking)
25g (vegan) butter, melted

-mix flour,salt,sugar and yeast in a large bowl
-add lukewarm milk and knead until smooth
-add chopped butter and knead again until smooth (messy but trust the process!)
-leave to rise until doubled in size (3hrs ish)

-mix together the filling ingredients until a smooth paste
-roll out dough into a large rectangle until about 1/2” thick
-spread out cinnamon filling evenly leaving a small space at edges to roll
-roll tightly from longest side into a sausage shape
-cut roll into 9 pieces or every 3” across
-put into a greased 8” cake tin or oven proof dish
-leave to rise for another 1-2 hours
-bake at 180°C for 20 mins/until golden

Topped with cream cheese icing:
1/4 cup (vegan) butter
1/2 cup cream cheese (vegan alternative or leave out and make normal icing)
1 1/3 cup icing sugar
1 tsp vanilla extract
2 tbsp plant milk
