These might be the messiest but most delicious pancakes I’ve ever made! Love me a mid-week stack so this morning I made blueberry cheesecake pancakes!! The lighting is still awful because it’s rained non stop here for the last 2 weeks 😭
Recipe:
1 banana
1 egg (or flax egg)
1/2 cup oats (or oat flour if not blending)
1 tsp baking powder
1.5 tsp white vinegar
1/2 cup frozen blueberries
-blend everything but the blueberries
-fold in the blueberries
– pour batter into small circles on a non-stick pan and cook until golden on both sides
– add toppings and enjoy!
