VEGAN CINNAMON SUGAR CHOCOLATE BABKAS:
The most perfect treat – cinnamon sugar, gooey chocolate, dough 🤤
Ingredients-
345g strong white bread flour
50g caster sugar
1.5 tsp cinnamon
7g instant yeast
0.5 tsp salt
200ml plant milk (lukewarm)
80g (vegan) butter
Filling-
50g brown sugar
1 tbsp cinnamon (more/less to taste)
15g (vegan) butter (melted)
60g chocolate (melted)
Choc chips
Dough:
Mix flour, salt, sugar, cinnamon & yeast in large bowl
Add lukewarm milk and knead until smooth
Add chopped butter and knead again until smooth (so messy but trust the process)
Leave to rise for 3hrs/ until doubled in size
Filling:
Mix together cinnamon, melted butter and brown sugar until a spreadable paste
Divide dough into 6 and roll out each piece into a rectangle
Spread cinnamon filling over leaving a little room at the edges
Spread over a thin layer of melted choc and sprinkle some choc chips over
Roll dough tightly from longest side (sausage shape) then cut down the middle
Twist both pieces over each other and roll twist into a knot shape
Leave to rise for another 1-2 hrs
Bake at 180°C (fan) for 20 mins
